Holiday Cranberry Sauce

4 cups cranberries (fresh or frozen)

2 Valencia oranges

1 cup maple syrup

½ tsp fresh ginger root, grated

1/8 tsp clove powder

1/8 tsp nutmeg powder

1/8 tsp cardamom powder

1/8 tsp cinnamon, ground (optional)


Begin by zesting the oranges. Juice the oranges and combine with the zest plus some water if needed to make one cup of liquid. Combine with the maple syrup in a medium saucepan. Bring to boil over medium heat. Add cranberries and spices and boil for 5-7 minutes, until all the cranberries burst. Stir occasionally to prevent from boiling over. Simmer another 7-10 minutes until the sauce thickens slightly, stirring occasionally. Once removed from the heat, the sauce will thicken as it cools. Enjoy hot or cold.
