Holiday Cranberry Sauce

4 cups cranberries (fresh or frozen) 2 Valencia oranges 1 cup maple syrup ½ tsp fresh ginger root, grated |
1/8 tsp clove powder 1/8 tsp nutmeg powder 1/8 tsp cardamom powder 1/8 tsp cinnamon, ground (optional) |

Begin by zesting the oranges. Juice the oranges and combine with the zest plus some water if needed to make one cup of liquid. Combine with the maple syrup in a medium saucepan. Bring to boil over medium heat. Add cranberries and spices and boil for 5-7 minutes, until all the cranberries burst. Stir occasionally to prevent from boiling over. Simmer another 7-10 minutes until the sauce thickens slightly, stirring occasionally. Once removed from the heat, the sauce will thicken as it cools. Enjoy hot or cold. |
