Hippie Bowl

Makes 2 servings

Ingredients

3 cups prepared jasmine rice

3 cups wok seared, sliced vegetables (any combination of bamboo shoots, bell peppers, onions, shiitake mushrooms, carrots, and cabbage)

Peanut sauce (recipe below)

Mixed spring greens

Sesame orange dressing (recipe below)

Almonds (caramelized or toasted)

Green onions (optional)

To Assemble, layer in the following order:

Rice, vegetables, peanut sauce, mixed spring greens, sesame orange dressing, sprinkle with almonds & green onions.

Peanut Sauce

Ingredients

¼ cup sugar

6 Tbsp peanut butter

3 Tbsp tamari sauce

¼ cup water

2 Tbsp peanut oil

2 tsp minced/crushed garlic

Directions

Heat on medium low heat until sugar is dissolved, stirring frequently.

Sesame Orange Dressing

Ingredients

2 cloves garlic, coarsely chopped

1 Tbsp fresh ginger, coarsely chopped

3 Tbsp rice wine vinegar

2 Tbsp tamari sauce

2 Tbsp orange juice

2 tsp sesame oil

3 Tbsp tahini

2 Tbsp peanut oil

Directions

Blend the garlic, ginger, rice wine vinegar, tamari sauce, orange juice and sesame oil in a food processor until well combined. Add tahini; pulse until dressing appears thick. Add oil in a thin stream until dressing is emulsified. You can add water, a tablespoon at a time if the dressing is too thick.
