Gluten Free Corn Bread

Ingredients

1 cup gluten free flour mix

1 cup cornmeal

2/3 cup granulated sugar

1 tsp salt

3 ½ tsp baking pwd

1 egg

1 cup soy milk

1/3 cup vegetable oil

2 cups frozen corn, rinsed and drained

Directions

Preheat oven to 400ºF. Spray or lightly grease a 9” cake pan with some vegetable oil. Combine flour, cornmeal, sugar, salt, and baking powder in a large mixing bowl. Add soy milk and vegetable oil until well combined. Stir in corn. Pour batter into the pan. Bake 20-25 minutes, or until a toothpick inserted into the center comes out clean.
