Mango Stir Fry

Makes 4-6 servings

Ingredients

2 Tbsp peanut oil

½ tsp sesame oil

1 head broccoli, chopped

3 carrots, sliced

8 oz fresh snap peas

½ red onion, thinly sliced

8 oz mushrooms, sliced

1 small red bell pepper, thinly sliced into 1 ½” – 2” pces

Mango sauce (recipe below)

2 lbs extra firm tofu, drained, cubed, marinated in ¼ cup tamari, and baked in oven @ 350º for 1 hour

6 cups prepared brown rice

Directions

Heat peanut oil & sesame oil in a wok over medium high heat. Sauté vegetables in oil until slightly tender, but still crunchy. Add tofu and mango sauce at the end just until heated. Serve over rice.


Mango Sauce

Ingredients

3 Tbsp lime juice

2 Tbsp tamari

1/8 tsp chili oil

4 cloves garlic

3 tsp fresh ginger, chopped/minced

1 mango, cut into sections

¼ tsp sesame oil

Directions

Blend in a blender until emulsified.
