Maple Nut Porridge

Makes 3 cups (2 servings)

Ingredients

¼ cup brown rice

¼ cup millet

¼ cup amaranth

¼ cup maple syrup

½ tsp ground cinnamon

¼ tsp salt (optional)

3 cups boiling water

1 cup soymilk (or whatever milk you prefer)

¼ cup flax meal

½ cup chopped nuts (preferably hazelnuts)

Directions

Place grains, maple syrup, cinnamon, salt, and boiling water in a crock-pot and cook on low heat overnight, or on high for about 4 hours. Porridge will look crispy and dark, but that is normal. Right before serving, stir in milk and warm through. Stir in nuts, separate into bowls, sprinkle flax meal over top of porridge, and serve warm.

I am not kidding you when I say that this porridge is addictive. Every single person who has tried it, from 6 months to 61, has loved it and wanted, no, DEMANDED, more.
