Cuban Bowl

Makes 3-4 servings
Ingredients for Brown Rice |

1 cup brown rice, rinsed 1 cup vegetable broth 1 cup water |
1 Tbsp extra virgin olive oil 2 cloves garlic, minced 1 tsp salt |

Directions |
|
Prepare brown rice on stove or in rice cooker. While the rice is cooking, prepare the plantain mixture. |

Ingredients for Plantain Mixture |
|
2 small or 1 large plantain, brownish yellow, cubed 2 Tbsp extra virgin olive oil 3 cloves garlic, minced |
2-3 cups water 2 Tbsp evaporated cane juice (or granulated sugar) Sea salt to taste |

Directions |
|
Sauté the plantains and garlic in the olive oil in a large pan over medium heat. Add sugar and water ¼ cup at a time until desired softness/texture occurs. Salt to taste. |

Ingredients for Assembly |
|
2 medium yams, cubed & cooked in microwave 1 can black beans, heated cilantro, minced in food processor |
salsa lime juice |
|
|
To Assemble, layer in the following order: Rice, plantain mixture, yams, black beans, cilantro, salsa, and a squirt of lime juice. |
