Vegetable Soup

| Ingredients | |
| Any combination of the following vegetables, diced: potatoes, carrots, celery, onion, leeks, green beans, corn, mushrooms, kidney beans
8 ounces tomato sauce 4 cups vegetable broth |
Minced garlic
Seasoning mix (such as Spike, Italian, Cajun, Trader Joe’s 21 Seasoning Salute) Sea salt and black pepper to taste |

| Combine all ingredients in a soup pot. Bring to a boil, reduce heat, and simmer 20-25 minutes until vegetables are tender but not soft. | |
