3 Bean Chili

Makes enough to feed a crowd

| Extra virgin olive oil
1 onion, diced 1 bell pepper, diced 2 garlic cloves, minced 1 ¼ pound ground turkey 3 -15oz cans beans (kidney, black, & pinto) 14 ounce aseptic pack diced tomatoes |
14 ounce aseptic pack tomato sauce (or jarred)
6 ounces tomato paste 1 Tbsp ground cumin 2 Tbsp chili powder 1 Tbsp dried oregano 1 Tbsp maple syrup 1 Tbsp tamari |

| Cook turkey, set aside. Sauté onion, bell pepper, and garlic in olive oil over medium heat until translucent. Combine all ingredients in a large soup pot, cover, and simmer for 60 minutes. | |
