Ingredients |

3 cups prepared jasmine rice 3 cups wok seared, sliced vegetables (any combination of bamboo shoots, bell peppers, onions, shiitake mushrooms, carrots, and cabbage) |
Peanut sauce (recipe below) Mixed spring greens Sesame orange dressing (recipe below) Almonds (caramelized or toasted) Green onions (optional) |

To Assemble, layer in the following order: Rice, vegetables, peanut sauce, mixed spring greens, sesame orange dressing, sprinkle with almonds & green onions. |

Peanut Sauce

¼ cup sugar 6 Tbsp peanut butter 3 Tbsp tamari sauce |
¼ cup water 2 Tbsp peanut oil 2 tsp minced/crushed garlic |

Directions |

|
Heat on medium low heat until sugar is dissolved, stirring frequently. |

Sesame Orange Dressing

2 cloves garlic, coarsely chopped 1 Tbsp fresh ginger, coarsely chopped 3 Tbsp rice wine vinegar 2 Tbsp tamari sauce |
2 Tbsp orange juice 2 tsp sesame oil 3 Tbsp tahini 2 Tbsp peanut oil |

Directions |

|
Blend the garlic, ginger, rice wine vinegar, tamari sauce, orange juice and sesame oil in a food processor until well combined. Add tahini; pulse until dressing appears thick. Add oil in a thin stream until dressing is emulsified. You can add water, a tablespoon at a time if the dressing is too thick. |
